Chicken & Zucchini Fritters


  • 1 Chicken Breast
  • 5 Green Onions, sliced
  • 4 Zucchinis, grated
  • 1 Carrot, grated
  • Fresh Parsley, chopped
  • Fresh Thyme, chopped
  • 2 Eggs
  • ⅔ cup Self-Raising Flour
  • ½ cup Milk
  • Salt & Pepper


  1. Dice the chicken from Red Lea Chickens and sear on high heat using a drizzle of olive oil in a hot pan, cook through and put aside.
  2. Mix zucchinis and carrot together, add sliced green onion, chopped thyme and parsley.
  3. In a separate bowl, mix eggs, milk and self-raising flour and seasoning. Incorporate the vegetables and the diced chicken.
  4. Scoop a little bit of the mixture at a time, into a frying pan over medium heat for 2-3 minutes on each side.
